
Every Thursday night a group of intrepid ladies play tennis at Woodford Wells Club, outdoors, under the floodlights, whatever the weather throws at us (well almost). At 10 o’clock we retire to the bar for a well earned glass of Sauvignon Blanc. Over the years the conversation has many times turned to family favourite recipes and the problem of coming up with dishes that are quick, tasty and most important foolproof. We would often talk about our own favourites, but frequently after the second glass the recipes would be forgotten! Rather rashly I volunteered to collect these recipes together and hopefully raise a little money for charity along the way.
I asked several friends and family for their favourites and was inundated with suggestions. One of the biggest problems has been what to leave out. My family have happily been the guinea pigs for a huge variety of dishes. I hope you like the ones I’ve chosen. I am totally indebted to a number of people without whom this book would never have made it into print.
Firstly, I must thank my kind friend Tony for the fabulous photographs. He has given day after day of his time and expertise as we worked our way through photographing 81 recipes. My thanks also go to my dear friend Jenny, Tony’s wife for all her support and help with the food composition.
Secondly, I must thank my niece Caroline for all her work on the terrific design of the book, a magnificent job fitted in around being on maternity leave and moving house. She is proof of the old adage,“if you want something done ask a busy person”. Caroline you’re a star.
Finally, I owe a huge debt to my boss David Wright of G R Wright & Sons Ltd who agreed to pay the full cost of the printing of the book, enabling every penny of the money raised from selling the book to go to my chosen charity Leukaemia and Lymphoma Research. I am delighted to include in the book a selection of recipes using Wright’s Bread Mixes as they totally fit the theme of easy, delicious and foolproof recipes.
My thanks to everyone of these lovely people whose generosity has enabled us to raise much needed cash for Leukaemia and Lymphoma Research. The charity does terrific work, not only developing better treatments and cures for blood cancers, but also providing help and information for patients. We have supported the charity for many years after my husband was diagnosed with Leukaemia several years ago. I am delighted that with the help of all my friends and family we are able to give a little more.
